Pastry can feel daunting but it's not so terrible!

INGREDIENTS
• 1 ¼ cups (190 g) all-purpose flour
• ½ teaspoon salt
• ¼ cup butter (60 g), cold and cubed
• ¼ cup (45 g) lard or shortening, cubed
• 2 to 3 tablespoons ice water
INSTRUCTIONS
To make the pastry, combine flour and salt in a large bowl. Add the butter and lard then, using your fingertips, rub and squeeze the butter and lard pieces until the mixture looks like breadcrumbs. Sprinkle in the water and mix until it makes a dough, adding more water (1 tablespoon at a time) until the dough comes together. Shape into a disc, wrap in plastic wrap, and chill at least 30 min.
Keep chilled or freeze up to one month. To roll, let dough come to room temperature.
