- 3 strips lemon peel
- Juice of 1 lemon
- 1 large garlic clove, smashed
- 1 tsp olive oil
- ¼ tsp salt
- Few sprigs of thyme
- 4 boneless, skinless chicken breasts
- Combine marinade ingredients in a zip-lock bag or shallow dish. Add chicken and marinate at room temperature 20 min or un to 24 hours in the fridge.
- Preheat barbecue to high. Spray grill very, very well with cooking spray. Remove chicken from marinade and place directly on the grill. Grill, lid closed, without moving the chicken around at all, 4 min. Flip and grill 4 more min. Reduce heat to absolute minimum and grill, lid closed, another 12 min for smaller chicken breasts, or another 15 min for larger ones. Let stand 5 min before serving.
